During his tenure at San Diego’s JSix, Chef Christian Graves was a leading light in the city’s food movement, co-founding the popular Cooks Confab and forging relationships with local purveyors. He continues this practice in Colorado, where his Citizen Rail menu is inspired by the state’s excellent local meats, produce, and provisions.
Boulder, Colorado-raised Chris Burmeister built his first bar in his garage while attending college in San Diego. After graduation, he moved back to Boulder and entered the bar business professionally, passing the Bar Smarts advanced program and learning from top area bartenders like Sean Kenyon, Ryan Conklin, and Ken Kodys. Burmeister most recently helmed the bar program at Outpost and Good Bar in Santa Barbara, where he developed his personal style, combining classic recipes with unique or obscure ingredients and seasonal touches. Expect his Citizen Rail cocktails to include a dash of the unexpected.
